Key lime yogurt bark
Yield: About 32 pieces
Ingredients
- 3 cups whole-milk plain Greek yogurt (2% or higher fat freezes the best)
- ¼ cup pure maple syrup or honey
- 1 teaspoon vanilla extract
- 1 lime, zested and juice of (regular or Key Lime), reserve some of zest
- 2 graham cracker sheets, crumbled (divided)
Preparation
- Line a rimmed baking sheet or 9 x 13-inch dish with parchment paper.
- Stir yogurt, syrup or honey, and vanilla, lime zest, and juice until incorporated. Fold in half of the crumbled graham crackers.
- Spread on the prepared pan to about ¼ inch thick.
- Top with remaining zest and crumbled graham crackers.
- Freeze for 3 hours or more until firm. Cut or break into 32 pieces and serve.
Bark can be stored in an airtight container between parchment paper for up to 1 month. This is also a very tasty treat served cold or semi-frozen like frozen yogurt!
Flavor variations
- Strawberry chocolate: 1 -1 ½ cups sliced strawberries, ¼ cup mini chocolate chips. Sprinkle sliced berries and mini chips on top of spread yogurt. Freeze.
- Blueberry lemon: Use zest of 1 lemon, reserving 1 teaspoon, and juice from the lemon. Stir into yogurt. Sprinkle 1 to 1 ½ cups blueberries on top of spread yogurt. Sprinkle remaining lemon zest. Freeze.
- Blackberry lime: Use zest of 1 lime, reserving 1 tsp, and juice from the lime. Stir into yogurt. Sprinkle 1 to 1 ½ cups blackberries on top of spread yogurt. Sprinkle remaining lime zest. Freeze.
